Happy Thanksgiving!
Hey suge! Yes, I know Thanksgiving was yesterday, but we can all benefit from the spirit of Thanksgiving (obviously not condoning the massacre of Native Americans, but the time spent with friends and family) year round. So for Thanksgiving I went home to visit my family and see friends I hadn’t seen in a while. With it being holiday season I wanted to make something special and memory inducing for anyone who would enjoy it.
Now, listen, I enjoy food as much as the next person.But I am not a food blogger/vlogger. Just sayin, because I did a post on pecan candy and I don’t wanna confuse nobody! Okay, now that that’s settled! I decided to make what’s called a Millionaire’s Pie for Thanksgiving. It’s a very VERY sweet pie my great grandmother use to make all the time. When I got older, she knew how much I liked them and would make one just for me! Chile, it would take some time to finish the entire pie but, living in a house with 3 other people, I had a lot of help eating it! Making this pie always brings back memories of my great grandmother for me, and to be honest I was her favorite (if you’re my cousin, argue with your momma! Ha!) great grandchild. We spent a lot of time together and I miss her dearly around the holidays.
So, let’s get into this pie sha! Below, you’ll find a video of me making the pie. Now, lemme tell you a secret, the original video was 30 mins long. A mess yea, So I went ahead and chopped it down so you can see the actual pie being made. Unfortunately, you’ll miss all my stories and “do do do’s” while I recorded, but that’s fine. I wasn’t spilling any tea! Below the video, you can find the recipe to make your own version.
Something I’ve always liked about this particular pie (besides my great grandmother) was it reminded me of myself and life. You can add different flavors, fruits, nuts etc and it’ll always taste delightful, it is essentially what you make of it. You want it so sweet your teeth hurt? Well, add something sweet! It’s too sweet? Add some lemon, to cut the sweetness. Life is what you make it, yes there are situations out of our control, so just control what you can sha. Ingredients
1 cup sweetened flaked coconut
1 cup crushed pineapple, well drained
1/2 cup chopped pecans
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
5 tablespoon lemon juice
1 cup frozen whipped topping
1 (6 oz.) prepared graham cracker pie crust
Instructions
COMBINE coconut, pineapple, nuts, sweetened condensed milk and lemon juice in large bowl; mix well. Fold in whipped topping. Pour into prepared crust. Cover and chill 3 hours or overnight.
GARNISH with toasted coconut and pecans before serving if desired.
